A separate copy for discontinued product updates?

I installed WSUS Offline Update 11.1.1 and downloaded updates for Windows 8.1. Now I want to download all updates for Office 2007 as well as for some other discontinued products. What is the proper way to do this:
downgrade to 11.0.3, download updates for Office 2007, then upgrade back to 11.1.1
OR
make a separate copy of 11.0.3
?

Just get a copy of 11.0.3 and download updates for o2k7. Then save the client-folder or reate an ISO. No need to touch it anymore.

For Windows use the most recent version (at the moment 11.1.1).

11.0.3 reports that there are 383 updates for Office 2007 to download. Does it include ones that are included to service packs? ([x] Include service packs)

No, Updates in Service Packs are not downloaded.

But the downloads in ofc glb include updates for all versions since O2k7. It is not possible
for WOU differentiate between versions, so all (security-)updates must be downloaded.

That's why I asked if I can safely downgrade 11.1.1 to 11.0.3 and then upgrade back. I'd prefer not to store duplicated updates.

If you deselect Office in 11.1.1 you will just store wsusou two times (just a few MB) and wsusscn2.cab (200MB).
Newer versions of wsusou will cleanup the ofc-folder deleting the Office 2007 updates requiring you to redownload them.
Also newer versions might change wsusou's behaviour making something incompatible.

I don't recommend you to down- and upgrade using the same repo.

Yes.

You just need to keep the client-folder or ISO file.
