The Windows 7 updates are global, means they work on everey language of Windows 7. There are no English-only or German-only updates. Just select Windows 7 x86 / Windows 7 x64 and wsusou will download all patches you need.

That is, does selecting only x64 miss any important 32bit updates which don't exist in 64bit versions but that everyone should have? (I am very sure the answer is 'no' but I just want to be certain).

You just need to download x64 Updates. If you look at x86 and x64 Updates, you will see, that x64 updates are much bigger than x86 ones; that is caused by including the patched x86 files into the x64 update packages.
