When using this software can I pick specific updates like when using regular Win7-Update? Or will the software install ALL found "missing" updates automatically?

Hello presetfreund,
No, there isn't any function in the user interface to enable or disable specific updates. The installer part of WSUS Offline Update installs all security-relevant updates that are listed in the catalog file wsusscn2.cab by Microsoft. See also: Coverage of WSUS Offline Update
However, there is a possibility to exclude single updates from installation. This is configured by putting the relevant KB numbers in text files. See /doc/faq-enu.txt.
