Manuel Hoefs created a great and simple Update Pack for Windows XP x86 if anyone is interested. Just visit his site and use the navigation on the upper left.

You still can. And it shouldn't break, because Win2000 Client and Server got EOL'ed at the same date. WSUSoffline mostly stumbles over its flawed detection of superseded updates. The same thing will happen for Windows 7, when Windows Server 2012 R2 and Win7 Embedded get updated further.
