Hi,
I have Windows 7 x86 service pack 1 already so I ticked Windows 7 x86 and unticked the service pack option does this download the updates needed for Windows 7 service pack 1 because surely the origional Windows 7 has different updates to Windows 7 SP1?

Short answer: yes!
A little more elaborated: WSUS Offline Update only downloads the updates that are applicable to the corresponding software (Windows version or Office version) with the latest service pack. So, for Windows 7 only the updates since SP1 are downloaded. This is independent of the status for downloading a service pack. This option only determines if the service pack itself is downloaded or not. In your case, this is not needed, so you're right to uncheck the service pack download.
